AC: High Side Pressure Spikes Normal?

I finally got around to recharging my AC after the valve on the low side leaked a little causing the drivers side to blow warm. It's about 82° out today, and I charged the low side to about 35PSI. High side is 200PSI.

Drivers side now blows cold (although still 10° warmer than passengers side), but I'm wondering if it's overcharged now? I noticed the high side spikes up to 250PSI occasionally, when this happens the radiator fans kick on and it quickly drops back down to 200PSI. Is this the limiter kicking in, or is this normal behavior?
