Exhaust manifold gaskets and flanges

I'm looking to replace my exhaust gaskets and flanges. Any advice on how to NOT break bolts? I know they can be a hassle on the exhaust. I'd like to take any precautions I can to help not break them, then replace them new.
Also, along the same note, anything I should look for when changing the gaskets out? What parts to I need to remove to get to them? What to clean? What brand of parts to replace with? Any and all advice on this subject is welcome!

get the engine hot, but not too hot to work on. the cast iron will expand at a faster rate than than the steel bolts allowing you to back them out easier.
