"Change Now" light stays on

Around the 2,400 mark since my last oil change, my "Change soon" light came on, and around 2,700-2,800 mark the "Change now" light came on, which makes me assume the light is working properly...

However, I got an oil change yesterday and the "Change now" light remains. Should I wait for a few more days to see if the light goes off by itself? Why might it be staying on?

There should be a procedure in the owners manual to reset the system, you can look it up yourself or take it back to the shop where you had the oil changed and make them do it.

But shouldn't it turn off by itself?

And does anyone have an owner's manual who can describe the procedure? I don't have the original manual, just the Haynes repair manual.

It will not go out by itself. The tech should have done it for you but on the older T-birds all you had to do was push and hold the "trip" button and press and hold the "trip reset" button for a second or two, the light should go off.
