Stuck in Celsius (22-32 degrees) and want the 70-85 degree temp style? How do you switch back?

Being a Canadian and quite peeved at the change many years ago, you best bet is to get a owners manual or go to any book store. Imperial to metric is what you should look for, cars are irrelivent. Good luck

I owned an 85 NYorker a couple years ago. The process is quite simple on the 85, may be similar to other years.
You have to remove the instrument panel. At the rear you will find a switch that says farienheit or celsius. Flick the switch to what you want. As a canadian car it also had a switch for language, english or French. Sometimes it would go wonky in high humidity and would start speaking French to tell me the doors were still open etc etc. The next dry day it would go back to English. It was a crazzzzzzzy car.
