99 Suburban - low engine temps

My 99 suburban only shows about 160 degrees on the guage even after replacing the thermostat. It seems like it used to read about 190.

For the longest time I was mysteriously losing coolant and wondered if the low temps were related. I am aware of the intake manifold problem with this engine and planned on doing that replacement. Just last week I was replacing the cap and rotor and happened to notice a residue trail from the quick connect heater hose located at 10 o'clock from the thermostat housing. I replaced the part between the block and the heater hose ($8 NAPA) and my leaking has stopped. Still, the engine temps do not get above 160 degrees. Any ideas?

I had the same problem after doing the intake gaskets on my 97 GMC Suburban. I replaced the thermostat while I had it apart and it would only ready about 172 degrees. I went and bought a Stant brand 195 degree and it's been fine since. I guess I just got a bad one.
