97 Taurus shifts too soon

97 Taurus sometimes shifts too soon, when warm it will shift from 1-2nd or 2-3rd, even if the RPMs are low, it will actually shift up at 1000 RPMS, sometimes going up hill! I have to slow down and then depress accelerator or really hit accelorator, so it will down shift or atleast disengage torque converter lock up. If I don't get it to shift down a gear, then it knocks and pings because it is running at too low an RPM, that and it's a FFV (Flex Fuel Vehicle), they are made to run on Meth and Ethanol, so they ping on cheap unleaded anyway.
