Have you verified that you have enought coolant in the overflow tank?

Do you have heat inside if you turn it on?

Does turning the heater to max allow you to go longer?

Do you have A/C? if so try turning it on, see if the cooling fans turn on.

try to find ECT sensor (engine coolant temperature) sensor it should be somewhere on the engine block or near the thermostat housing I can't remember exactly. But disconnect it and fan should come ON. since pcm will receive open signal which will read as -38F if you had scanner, so fan will come on automaticaly. This way you will know if fan is working. Also replace thermostat anyway it is easy to do and very inexpensive. Hoses if they look swollen or if you see any signs of cracking or signs of leaks replace them.

put in a different fan on yesterday.... and paying attention to the gaugh, it took a longer of a time for the needle to start moveing up then it used to... which is a good thing :) however i do not know where the thermastat is... :( if i am in front of the car looking at the engine, would it be on the side of the engine or in the back of it ?

Thermostat is at the right passenger rear. It connects to the radiator (bottom) outlet pipe. It's not easy to replace and that's why it's probably the original one.
